Streusel Coffee CakeThe directions for this coffee cake say to put half the streusel mixture in the middle, then the other half on top, which provides for a very visually and appetizing look for the top. Well, when I made this (for company, of course) without thinking, I dumped all the streusel in the middle, and had nothing for the top. Baking it provided a very boring, plain looking cake. So I just drizzled a little maple icing over the top, and it turned out so good, I think I'm going to do it this way all the time!! Since the middle had double the amount of streusel it normally does, it was rich and thick and chewy and SOOOO good!! From Fran Costigan's More Good Great Desserts.
