White Beans and Spinach

A deceptively "plain jane" looking dish that is REALLY good!! Steam stir a large onion and 2 garlic cloves in a bit of broth or water till softened. Add in 9 ounces spinach (or any other greens), 1/2 tsp. oregano and 1/4 tsp. salt and steam until wilted. Add in a tablespoon of lemon juice and a can of white beans and stir till heated. Dinner is ready in 15-20 minutes!! I use this dish to use up whatever greens I have on hand ... especially useful during the summer CSA/Farmer's Market time. I've used kale and bok choy at times, instead of spinach. The bok choy works especially nicely, since its white stalks provide a nice crunch in this dish.
