Fettuccine Alfredo

A no added fat, vegan alfredo that tastes as rich as its cholesterol-laden dairy version! I can't get over how EASY this is to mix up!! The sauce is made in the time it takes to cook the pasta! Recipe by Lindsay Nixon (Happy Herbivore), and found here. My changes include doubling the amount of garlic and onion powder. I also dump everything into the blender at once (Lindsay suggests a two step process), and once all blended, I just microwave it in one minute increments, whisking after each. Thickens up beautifully. Can easily be made GF by replacing the 2 Tbsp. of flour with a GF thickener (I used potato starch) and using a GF pasta.
