Seitan, Polenta, and Greens

A recipe from Nava Atlas that I tried for the first time last night. I wasn't sure about the combination of seitan and polenta, but this is typical of Nava's recipes ... she finds such unusual combinations of foods, and it really works!! I did not use the sun dried tomatoes that the recipe calls for, but definitely will next time. A quick, one-pot meal, I threw this together in a little over 1/2 an hour after an all day hike, and even though it is very low fat, I found it very filling and satisfying. You can make make it with no added fat if you want, since the only added fat is a little bit of oil for sauteing. For GF folks, just sub the seitan with Soy Curls. Recipe here.
