Pumpkin CheesecakeThis is just out-of-this-world FABULOUS!! It is one of the recipes in Vegan Pie in the Sky by Isa Chandra Moskowitz and Terry Hope Romero. Highlighted in The New York Times (recipe is shared there). Recipe calls for a graham cracker crust, but since hubby is GF, I went with the crust in this recipe (although I didn't bother with the liquid stevia and coconut sugar, neither of which I could find. I eliminated both of those, and instead used 1/2 cup granulated sugar), and it was the perfect pairing for this cheesecake. Crunchy, sweet, and delicious.
